This small roast comes from the bottom sirloin. It is also triangular in shape though some butchers may square it off into a block shape. The Tri-Tip Steak is cut from the roast.and can be split into a couple of triangle shaped steaks or cross cut into multiple rectangular shaped Tri-Tip Steaks. Tri-Tip roasts and steaks are best marinated, grilled, broiled or roasted with the roasts carved in thin, cross-grained slices.
