Organic pastured chicken. Fed organic feed, no antibiotics or hormones. Breed: Lancaster Bresse, Barbizieux, & Cross. Stew Hens are a larger bird, and more mature. All pasture raised birds can take a while to cook to achieve a tender meal. A key is to ensure the meat reaches a temperature of 165 when being cooked, and it stays moist while cooking Brine, marinating, slow cooking and pressure are some methods. Broil the skin for 5 mins or so, to ensure it breaks down properly. Onion and celery inside helps too.
